PLAZA HOTEL OPENS IN A SYDNEY ICON

The former and famous Star Bar has been reimagined, opening to “redefine the urban entertainment experience” as the Plaza Hotel.

Winchester Hotel Group, under the creative direction of Sarah and Ryan Maloney, quietly unveiled what is geared to be the city’s newest destination for music, nightlife and dining.

Located in what is also an historic icon of Sydney, the former Plaza Theatre, the multi-level Plaza Hotel is a tasteful blend of heritage charm and modern sophistication.

While aiming to bring a new energy and perspective to the venue, every element has been thoughtfully preserved or reimagined to honour its heritage, seeing classic facades and historic detailing integrated with a contemporary, modernist design.

Spanning three distinct levels, a variety of unique spaces offer settings to suit every mood.

Plaza Level One has been transformed into an Ibiza-inspired club with vibrant design and a cutting-edge sound and lighting system.

Below ground, Plaza Basement brings a “cozy, seductive atmosphere” geared to nightlife, providing an intimate music lounge under warm amber lighting, stocked with a curated vintage vinyl collection and serving crafted, agave-infused cocktails.

Plaza Bistro is a fresh take on modern Australian cuisine, combining seasonal, locally sourced ingredients with European cooking techniques. Driven by renowned executive chef Sam Bull, the menu strives for a balance between “approachable luxury and culinary excellence”, plating signature dishes ranging from a refined caviar menu to a humble cheeseburger.

An outdoor dining area extends the Bistro, reminiscent of Parisian charm courtesy of elegant seating, ambient lighting, and a view of the bustling CBD.

Plaza Theatre furthers the retention of heritage charm, utilising the original ceiling from the original 1929 Theatre. Designed as a 30-seat theatre for hosting a range of events, from private screenings to live streaming, its retro aesthetic belies its state-of-the-art technology.

An evolution of veteran Kim Maloney’s outfit, custodians of Sydney’s St James Hotel and the legendary Bondi Hotel, Winchester is proud to be the next generation of Australian hospitality.
