Gallaghers Hotels announced a move in November to partner with internationally renowned chef Darren Simpson, to bolster its culinary credentials and keep ahead of increasing foodie patronage.
Having worked in acclaimed restaurants across Britain including the Michelin Star-rated Roscoff in his native Northern Ireland, Simpson will ensure the Gallaghers chains of Irish and French pubs are offering the best bespoke meals possible.
Joining executive chef Ronny Ghantous, the PJ Gallaghers Irish pubs have benefited from a selection of new traditional, hearty Irish dishes such as Irish Stew with mutton and pork sausage rolls.
The Gallaghers French-themed venues of Le Pub in the Sydney CBD and in Balmain, and The Union in North Sydney, have also benefited from Simpson’s European experience, boasting dishes including a rustic seafood stew, and slow-cooked onions with smoked cheese.
Angela Gallagher of Gallagher Hotels told Hospitality Magazine “It’s a new era for pub food in Australia.”
