A new national program – ChefBox – offer chefs new and innovative products to try from Australian producers, to keep them inspired and ahead of the trends.
Chefs in pubs throughout Australia can register their interest to receive a box of complimentary artisan ingredients, to explore and try out in their kitchen in their own time.
Some products will be new, some familiar; think green garlic, black barley, seaweed, sprouted flours, malt, Australian natives and more.
Each box is curated to the chefs’ individual preferences and delivered directly to their door. All the chef has to do is try the products and provide professional feedback.
Straight To The Source (STTS) is a culinary advisory company led by kitchen stalwarts Tawnya Bahr and Lucy Allon, who work with many primary and artisan producers around the country.
STTS reports producers are diversifying, value-adding and upscaling to create innovative flavour profiles, textures and products for new applications, such as Geraldton waxflower – a relatively new Australian native being bred for culinary use.
“Inspiration comes from many different places and as a chef it often comes from ingredients,” says Bahr.
“Connecting with the farmers, growers, catchers, cultivators and artisans who produce our food and exploring new ingredients is one of the joys of cooking. Connecting them with chefs is a win-win, in our opinion!”
