REPUBLIC WELCOMES GUESTS TO THE INNA

Burgeoning pub powerhouse Virtical has begun its transformation of the stalwart Republic Hotel in the Sydney CBD, ushering in a new level of sophistication in the opening of the on-trend INNA Lounge.  

Originally a single-storey pub, the Republic has stood on the city site since 1865, evolving over time into the four-level landmark it is today. Its lower-level hangouts cater to the lower-CBD business crowd, beneath the luxe new Inna, pitching to the experience-led younger demographic flocking back to the CBD, and all crowned by Taylor’s Rooftop.

The new late-night bar space is intended for those looking for something “more refined” and serves a blend of both style and nostalgia for up to 70 guests. Its dark, sexy interior is equipped with soft leather booths and low tables for an intimate lounge-style atmosphere, and the walls are decorated with a rotating selection of modern Australian artwork.

To meet the vibe, the bar is led by an inventive cocktail list that includes reimagined household staples and iconic Australian ingredients, while chef Derek Bell further bolsters the decadence with an impressive selection of bar snacks that includes sustainable caviar.

“We’ve drawn inspiration from the vibrant art deco period of the 1930s and the products that emerged after World War I,” explains “Rusty” James Russell, Virtical’s group beverage manager.

“These drinks reinvent familiar flavours from household staples.” 

Front and centre is the ‘Biscuit Tin’ – an Arnott’s Biscuit Peach Cobbler, and an homage to the inventor of Milo, the ‘Mayne Meal’ – a blend of two classics, Milo and the Espresso Martini.

An elegant marble bar top fronts one of the largest Agave indexes in Sydney, peppered with 120 Tequilas and mescals, alongside a diverse range of more than 400 spirits, as well as over 200 wines – most of which are produced in Australia.

Up-and-coming developer Virtical bought the famous Sydney pub last August, prompting speculation the prime CBD location could see redevelopment.

The following month the self-described “property development powerhouse” snapped up Moelis’ Taylor Square opportunity, in the Kinsellas and Courthouse Hotel collection.

On Friday (21 March) a glittering opening night event welcomed guests into the Inna sanctum, which will be open to the public Tuesday to Saturday from 4pm till late, and also offers exclusive hire options.

Virtical says Inna represents stage one of a multi-million-dollar renovation over the coming months that will see “an exciting facelift for the beloved four-story Republic Hotel building”.
