In July Sydney’s Waugh Group launched its concept for the former City Hotel, offering a taste of Mr Tipply’s savoir fare to the inner-city markets.
Spread over two levels, the eclectic designer-styled venue aims at ‘relaxed yet sophisticated’, with rich fabrics, African wallpaper and a comprehensive drinks list including a range of classic cocktails.
The Asian-inspired menu was designed by executive chef Elaine Lee (Westin, South-East Asia) and rising star chef Gemma Lush, and promotes share plate eating with diversity and choice.
The generous space allows for bar and cocktail service, through to casual communal tables and group bookings, which likely represent the preferences of both the professional and Asian markets geographically suited to the venue throughout the week and on weekends.
Waugh Hotel Consultancy had a busy year, also acquiring and re-launching the Northern Beaches long-suffering Collaroy Hotel, with a grand new refit, offering and management.
