The Laundy family is finalising a complete bottom-to-rooftop big-budget transformation of the historic Woolloomooloo Bay Hotel.
Located on a sharp corner of Bourke St and Cowper Wharf Road, opposite the Finger Wharves, the original hotel was built 1873.
A new building was constructed in 1922. For decades it was known as the Macquarie Hotel and operated by Reschs Brewing, before taking its locality moniker.
Less of a mouthful, it is commonly known as the Woolly Bay Hotel.
After buying the pub from Halcyon Group in June 2015, Laundy Hotels leased it to ALH for several years, before resuming operations in 2018.
This year it has been undergoing a major makeover, from the ground up … and up to a brand-new rooftop level, offering stunning vistas of the harbour and Sydney skyline.
The three new levels will offer a blend of tradition and European styling, for “romance and escapism”.
Ground floor hosts an elegant, ‘trattoria’ style public bar, decked in dark leather finishes, polished concrete and chic timber joinery.
Patrons ascend the grand staircase and are transported to European islands, donned in a lighter palette of ceramic detailing, timber and terrazzo. Outside is one of Sydney’s best balconies, overlooking the vibrant shoreline.
Climb a final level to the new rooftop bar, resplendent in hues of white, bamboo and European stone, flowing from inside to out, reminiscent of a Greek Island. Guests enjoy harbour views, accompanied by share plates and cocktails.
Food & Beverage is scheduled to be a main focus of the revised Hotel, taking on the wharf restaurants across the road.
The project is the work of Justine Laundy, Arthur’s daughter, and her husband Nick Tindall, collaborating with designer Luchetti Krelle. Justine says the Woolly’s potential and gravitas made it “paramount” the Group made this one special.
“I drew inspiration from many destinations across the globe. I wanted European class and style, but comfort is always my ultimate aim.
“It needs to look beautiful and also be session-able.”
As works are completed, ahead of relaunch in November, team Laundy is now focusing on final details, of branding, menus and the industry challenge of hiring staff.
Still filling key positions, including “a brilliant GM”, Justine says they are looking to a crew that can help launch a revised icon.
“We’ll be opening in COVID times, so hiring staff is tricky. The pub needs aspiring chefs and talented front of house staff who are looking to take a step up.
“We have some great members already, but are hoping to complement and grow that team further.”
Asked about the cost of the comprehensive renovation, the younger Laundy paused …

“We will end up spending around $11 million, but we’ve paid homage to dad in the naming of the rooftop bar, so hopefully he’ll let that slide!”
