
Feros Group have begun welcoming enthusiastic locals and guests to all-new hospitality ‘destination’ The Wilton at Bingara Gorge, having officially thrown open the doors Friday, 15 May.
“We love to do community-based venues, but this one is a real community,” says Chris Feros.
Located within the picturesque surrounds of Bingara Gorge Golf Course, the modern, pavilion-style The Wilton is designed to blend seamlessly into the natural landscape.
Accommodating up to 1,000 people, in an area seeing rapid growth, its aim is to be a vibrant, community-focused venue to serve as a landmark for locals and a destination for surrounding suburbs, including Campbelltown and Camden

It features a large family-friendly bistro and lounge bar and dedicated sports bar with state-of-the-art screens, named Steve’s – in honour of the late Steve Harvey and partners the Harvey family. There is also an expansive beer garden, function spaces and a large outdoor kids’ play area soon to be equipped with shelter sails, for families to enjoy year-round.
At the heart of the offering is a menu group culinary director Jamie Gannon says is “fresh, seasonal and full of flavour”, inspired by pub classics, country-style cooking and hearty dishes for sharing.

Gannon uses seasonal ingredients and locally sourced produce, incorporating The Wilton’s own dry-aged beef program and fresh produce from its working garden.
There will also be a strong ongoing calendar of entertainment and activations, bringing live music every Friday and Saturday and Family Sundays each week, which will see rotation attractions such as a reptile zoo, slime-making classes, face painting and balloon artists.

Opening weekend was reportedly “incredibly well received” by locals, some of whom thanked the Feros team for giving them a brand-new pub, in an area seeing “incredible” residential growth that is a 15-minute drive to the nearest alternative, in Picton.
A special auction for the first schooner took place on Friday, raising an amazing $28k for the King Horn Cancer Centre after local punters put up $7k for the rights, and The Wilton, the Harvey family and another partner each matched the sum.

Destined to be a premium hospitality experience, the $50 million build began early 2025. The Wilton represents stage one of the broader Bingara Gorge hospitality vision. The following two stages will bring a 250-seat function room, extensive accommodation – including seven houses purchased as part of the project – and premium wedding facilities.
Metro Property Development is developing the wider Bingara Gorge precinct, and Feros made special mention of the success of working with Metro’s Luke Hartman, and of the company’s focus on delivering its promise to create something in keeping with the community.
The golf course has been acquired by NSW Golf, which has plans for a massive upgrade to make it a ‘centre of excellence’ and one of best in the state. The build so far has included a new pro shop.
Feros Group holds a diverse portfolio counting Taren Point Hotel, The Prince in Kirrawee, Highfield in Caringbah and the new Parc Pavilion in Cronulla – many of which it built from the ground up.
Feros says every greenfield they execute they learn from the last, getting “a bit better” each time.
“To work on a project like this and open it, and see people enjoying it the way you designed, is just amazing,” he enthused. “I love watching people enjoy what we have created.
“It takes a lot of blood, sweat and tears to get through, but when you open it’s such a good feeling.”
