Prospect Hotel and Cellars opened last Friday, officially ending a century-long battle between planning authorities and the area’s historic influence of the Methodist Church.
Well situated in a popular stretch of restaurants and cafes between Fitzroy Terrace and Regency Road, the pub fills a missing piece amongst a thriving social hub.

Marc Huber, Josh Voigt and Dale Wostikow, friends and business partners, began the journey last year, although Huber had been dreaming of the opportunity since he moved to the area a decade ago.
“I feel incredibly fortunate to have been approached by Dale and Josh to collaborate on this venture,” Huber said.
While bookings will open in early April, walk ins are welcome for lunch and dinner, seven days a week.
The pub can accommodate 200 visitors across its main bar, dining room, function and alfresco areas.
It also sports a boutique bottle shop which can be accessed from the rear carpark.

Head chef John Simpson-Clements, who has worked on MasterChef: The Professionals UK as well as Adelaide restaurants Eleven and Icarus, has joined the team and will be serving up modern Australian and pub classics.
