UFS’ FUTURE MENUS REPORT DISHES OUT 2025 TRENDS

Unilever Food Solutions UK&I (UFS) has just released its third annual Future Menus report, based on in-depth research on food trends in hospitality.

Recognising that keeping on top of food trends is both critical to the success of pubs and incredibly time consuming, UFS has brought together its 250 in-house chefs from across the globe to research and test new ideas.

UFS’ research shows that Gen Z dine out more than all other generations, with 25 per cent eating out more than once per week, making this generation a critical influence on trends.

Sixty-six per cent of Gen Z diners prefer global cuisine, and ten per cent of the same group prefer to customise their dishes.

The trends have also been influenced by an increase in demand for Latin American and Asian flavours; chefs honouring their multi-cultural heritage; and the influence of AI on diners’ personalisation of dishes.

As cultural and social landscapes change, so too does dining. This year the changes have brought a stronger desire for gourmet versions of traditional street food.

Last year, the Future Menus report offered eight trends.

This year the focus is on four trends:

  1. Modernised Comfort Food
  2. Borderless Cuisine
  3. Street Food Couture
  4. Diner Designed

Modernised Comfort Food is still trending well from last year, as diners desire both familiarity and an element of surprise, while Borderless Cuisine is integrating techniques, flavours and presentations from across the globe in innovative yet authentic ways.

Street Food Couture retains an informal street approach while utilising gourmet ingredients and refined techniques, while Diner Designed enables diners to experience an immersive and multisensory experience.
