BADASS BBQ TALK LOW AND SLOW TO COLOSIMO

Last weekend, the country’s largest ‘meat and music’ event – Meatstock – took place at Sydney Showgrounds, showcasing the wonders of ‘low & slow’ style cooking taking off in Australia.

Michael Willcocks, together with pub gourmet and founder of Fork & Schooner, Mitch Davis, is one half of BadAss BBQ – a team of meat-smokin’ fanatics that recently competed in the coveted Jack Daniel’s Invitational, in Tennessee.

BadAss travel around Australia on the circuit of semi-professional competitors, interviewing people associated with the industry.

Willcocks caught up on the weekend with Marcello Colosimo – one of the founders of the Australian Hotel & Brewery and long-time fan of the relatively new to Down Under technique of low & slow.
